Ensure that you have a large pot with water for cooking the noodles.
Heat the three tablespoons of your vegetable oil in a skillet pan and set over the medium-high heat temperature.
Add the garlic and ginger to it and cook for 15 seconds.

Boil the water in the pot and add the noodles to it.
Cook for 30-60 seconds or until they are tender.
Drain the noodles well, cool them in ice-cold water, and repeat the draining process.

Place the curry/oil mixture, noodles, and the remaining ingredients in a salad bowl.
Gently toss them to combine.
Cover the salad and store it in your fridge until the time for serving.
